When I was a kid, my parents always brought us to this restaurant that served curry fried rice (咖哩海鮮炒飯). I haven’t had it for almost 15 years. I am so happy to recreate this dish and to find my childhood memories.

Ingredients:
- 2 eggs for frying (topping, optional)
- 1 medium broccoli, cut into small pieces
- 3 shallots or 1/2 white, finely chopped
- 5 clove garlic, finely minced
- 10 prawns or shrimps
- 5 scallops sliced in half horizontally
- 2 Tbsps Curry Powder
- 3 cups cooked rice (day old)
- 2 Tbsps of cooking oil of your choice
- 2 Tbsps soy sauce
Prawns Marinate:
- 1/2 tsp chicken bouillon
- 1 tsp soy sauce
- 1/2 tsp of white pepper
- 1/2 tsp of cooking wine
- 1 tsp of sesame oil
Step-by-Step Guide
- Peel, wash and devein 10 prawns. Save the orange shrimp fat.
2. Marinade 10 prawns with 1/2 teaspoon of chicken bouillon, 1 teaspoon of soy sauce, 1/2 teaspoon of white pepper, 1/2 teaspoon of cooking wine, and 1 teaspoon of sesame oil.
3. slice the scallops in half and lightly season them with salt and pepper.
4. Heat oil in a frying pan or wok over medium-high heat. Pan-fried prawns and scallops until it’s almost cooked and put aside ( I like to stir them in after so they won’t be overcooked)
5. Add garlic and onion and cook, stirring often, being careful not to let them brown, about 1 minute. Add the shrimp fat and stir in the mix.
6. Add in broccoli and cook until 80% cooked, about 1-2 minutes.
7. Add in cooked rice, stir, and separate the pieces.
8. Stir in 2 tbsps of curry powder. Cook and stir until fragrant, about 1 minute.
9. Stir in the cooked shrimp and scallop until combined. Drizzle in 2 tbsps of soy sauce, toss, and stir until combined.
11. Serve immediately topped with a fried egg.
