Disney World is one of my favorite places on earth outside our home! I always go at least once a year before having children. While I may not go as often as before, I can always make the Mickey pretzel with the Jalapeno cheese dip, and feel like we are at Disney from home!

Serving size: 4 pretzels

Main:

  • ½ cup warm water (110°F)
  • 1 (¾-ounce) packet of active dry yeast
  • 2 tablespoons light brown sugar
  • 1 teaspoon salt
  • 2 cups all-purpose flour

Water bath:

  • 4 cups water
  • ¼ cup baking soda

Egg Wash:

  • 1 large egg
  • 1 tablespoon of water

Topping ideas:

  • Kosher salt
  • Cinnamon
  • Garlic
  • Onion
  • Everything bagel seasoning
Step-by-Step Guide
  1. In the bowl of a stand mixer, add warm water and sprinkle yeast on top. Let sit for 10 minutes.

2. Add brown sugar and 1 teaspoon salt. Using the flat beater attachment, beat at low speed to combine. Then mix in flour.


3. Switch to the dough hook attachment and knead for 5 minutes. The dough should be smooth and elastic (see video)


4. Put the dough in a bowl sprayed with nonstick cooking spray. Cover with a cloth and let rise in a warm place for 30 minutes. (I use the proofing function in my oven)


5. Preheat oven to 450°F. Line a large ungreased baking sheet with parchment paper and set aside.

6. In a large pot over high heat, bring 4 cups of water to a boil. once boiled, add baking soda to a pot.


7. Turn the dough out onto a lightly floured surface. Cut dough into four equal pieces.


8. Working with one piece at a time, roll the dough out and cut with a Mickey cookie cutter (or cut out with a knife). See the video above.


9. Using a sharp knife, cut the Mickey shape into the dough. See the video above.


10. Working with 1 Mickey at a time, use a big flat spatula to carefully lift a dough Mickey into a baking soda bath. Poach for 15 seconds and remove to prepared baking sheet.


11. In a small bowl, mix egg and 1 tablespoon water and brush onto Mickeys. Sprinkle kosher salt or other toppings over pretzels.


12. Bake until deep golden brown, about 10 minutes, and serve them hot!


13. Serve them hot with Jalapeno Cheese sauce!
