Traditionally, this dish involves several steps, but with this one-pot rice cooker version, you can enjoy all the delicious, bold flavors of bibimbap with minimal effort and easy cleanup. Rice cookers are surprisingly versatile and perfect for creating easy, low-effort meals. Unlike the stovetop, a rice cooker offers an automated cooking process that’s perfect for cooking pasta evenly without needing constant stirring or adjusting heat levels.

Day 8: Korea- Rice Cooker Bibimbap

Ingredients:

  • 3/4 cup of rice 
  • 1/4 bundle of spinach  
  • 1 egg (add at last 3 mins)
  • 1/2 small carrot, shredded
  • 1/4 onion,  chopped
  • 1/4 bag of bean sprouts
  • 4 cloves of garlic, chopped
  • 5 shiitake mushroom (fresh/ rehydrated)

Mushroom Marinate

  • 1 tsp oyster sauce 
  • 1/2 tsp soy sauce 

Pork Marinate

  • 1/2 tsp salt
  • 1/2 tsp cooking wine (I use Shaoxing wine)
  • 1/2 tsp sesame oil
  • 1 tsp light soy sauce 
  • 1/2 tsp sugar
  • 1/2 tsp white pepper
  • 1 tsp garlic
  • 1 tsp juice from grated ginger 

Base:

  • 3/4 cup chicken stock
  • 1 tbsp soy sauce

Bibimbap sauce:

  • 2 tbsp gochujang (Korean chili paste)
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • 2 tbsp water
  • 2 tsp toasted sesame seeds
  • 1 tsp sesame oil
  • 1 tsp apple cider vinegar 
  • 1 tsp minced garlic

Steps:

  1. Mix soup base ingredients in a bowl 
  2. Cut all the carrots, onion into small cubes, I did 1/3 inch for my toddlers, but you can cut it bigger if you desire 
  3. Wash 3/4 cup of rice and add them to the pot
  4. Add vegetables and the marinated pork on top of the rice
  5. Add soup base
  6. Cover the lid and turn on the cooker to regular rice mode
  7. Mix sauce ingredients in a bowl 
  8. Last 3 minutes of the cycle, add the egg (optional) 
  9. Once the machine beeps, top with one round of Sauce sauce and sesame oil, and sesame seeds, mix them, and enjoy! 
  10. Add Bibimbap sauce to your liking and enjoy! 

Tips for Success

  • Custom toppings: Use any vegetables you love—cucumbers, mushrooms, or bell peppers are great additions.
  • Vegetarian option: Swap the beef for tofu, and use vegetable broth.
  • Sauce adjustment: Gochujang can be spicy, so add gradually to get the perfect heat level.

Ingredients
  

Bibimbap sauce:

  • 2 tbsp gochujang Korean chili paste
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • 2 tbsp water
  • 2 tsp toasted sesame seeds
  • 1 tsp sesame oil
  • 1 tsp apple cider vinegar
  • 1 tsp minced garlic
