Chinese-style Roasted Peanuts with Garlic and sesame seeds

Growing up in Hong Kong, some of my fondest memories are intertwined with the tantalizing aromas and vibrant flavors of traditional snacks. Among these delights, one snack stands out as a timeless favorite—the humble yet irresistible Chinese-style Garlic Sesame Peanut.

One of the things I love most about this is its versatility. From being enjoyed as a standalone snack to serving as a flavorful topping for salads, noodles, and stir-fries, the possibilities are endless. Its savory-sweet flavor profile adds depth and complexity to any dish, transforming the ordinary into the extraordinary with a sprinkle of crunchy goodness.

Originating from ancient recipes passed down through generations, this snack has stood the test of time, evolving and adapting to suit the changing tastes and preferences of modern-day snack enthusiasts.

At the heart of Chinese-style Garlic Sesame Peanut lies its exquisite texture—a symphony of crunchiness and nuttiness that delights the senses with every bite. Each peanut is roasted to golden perfection and coated in a fragrant blend of fried minced garlic, toasted sesame seeds, and savory seasonings. The result is a crunchy indulgence that leaves you craving more with each mouthful.

Ingredients:

  • 1.25 lb of peanuts
  • 1/4 cup of oil for frying
  • 2 bulbs of garlic
  • 1/4 cup of roasted sesame seeds
  • 4 tbsp sugar
  • 2 tbsp fish sauces
Step-by-Step Guide
  1. Fried garlic on medium heat until golden brown, roughly 3-5 minutes. Depending on how wet the garlic is, may take longer

2. Drain the garlic and save the oil.

3. On Medium-low heat, add peanut and 2 tbsp of garlic oil. Keep stirring and roasting the peanuts. take about 20 minutes to cook.

4. Around 18 minutes, take a peanut and try it, if it doesn’t have a grassy taste, it’s cooked

5. Turn the heat to the lowest and add 2 tbsp flour, mix well and cook for roughly 1 minute. This helps dry out the peanut and keeps it crispy.

6. Add sugar and fish sauce mixture and cook until all fluid evaporates, around 2 minutes 

7. Add fried garlic and sesame seeds

8. Keep mixing until everything is incorporated well.

9. Pour the peanuts on a large tray like a cold wok, a big plate, or a baking tray. 

11. Keep stirring and separate the pieces, for roughly 5 minutes. Wait an hour for the peanuts to completely cool down before putting them in a container.

  • 4 tbsp sugar
  • 2 tbsp fish sauce

Instructions

  • Spilt peanut is half way, around 10 minutes
  • Around 18 minutes, take a peanut and try it, if it doesn’t have a grassy taste, it’s cooked
  • Turn the heat to the lowest and add 2 tbsp flours, mix well
  • Add sugar and Fish sauce and cook until all fluid evaporates, around 2 minutes
  • Add fried garlic and sesame seeds and keep mixing until everything is incorporated.
  • Pour the peanuts on a large tray like a cold wok, a big plate, or a baking tray to cool down
  • Keep mixing and separating the pieces, roughly 5 mins
  • Wait an hour for the peanuts to cool down completely before putting it away in a container.
