fried garlic on medium heat until golden brown, roughly 3-5 minutes. Depending how wet the garlic is, may take longer
Drain the fried garlic and save the oil
On medium low heat, add peanut and 2 tbsp of fried garlic oil. This help keep the skins on the peanuts
Spilt peanut is half way, around 10 minutes
Around 18 minutes, take a peanut and try it, if it doesn’t have a grassy taste, it’s cooked
Turn the heat to the lowest and add 2 tbsp flours, mix well
Add sugar and Fish sauce and cook until all fluid evaporates, around 2 minutes
Add fried garlic and sesame seeds and keep mixing until everything is incorporated.
Pour the peanuts on a large tray like a cold wok, a big plate, or a baking tray to cool down
Keep mixing and separating the pieces, roughly 5 mins
Wait an hour for the peanuts to cool down completely before putting it away in a container.
