Chinese-style Roasted Peanut with garlic and sesame seeds

Ingredients
  

  • 1.25 lb peanuts
  • ¼ cup oil for frying the garlic
  • 2 bulbs garlic chopped
  • ¼ cup Roasted sesame seeds
  • 4 tbsp sugar
  • 2 tbsp fish sauce

Instructions
 

  • fried garlic on medium heat until golden brown, roughly 3-5 minutes. Depending how wet the garlic is, may take longer
  • Drain the fried garlic and save the oil
  • On medium low heat, add peanut and 2 tbsp of fried garlic oil. This help keep the skins on the peanuts
  • Spilt peanut is half way, around 10 minutes
  • Around 18 minutes, take a peanut and try it, if it doesn’t have a grassy taste, it’s cooked
  • Turn the heat to the lowest and add 2 tbsp flours, mix well
  • Add sugar and Fish sauce and cook until all fluid evaporates, around 2 minutes
  • Add fried garlic and sesame seeds and keep mixing until everything is incorporated.
  • Pour the peanuts on a large tray like a cold wok, a big plate, or a baking tray to cool down
  • Keep mixing and separating the pieces, roughly 5 mins
  • Wait an hour for the peanuts to cool down completely before putting it away in a container.
