Day 2: Spain: Seafood Paella

Ingredients:

  • 10 shrimp
  • 4 scallop
  • 2 bell/ Serrano pepper
  • 1/4 onion
  • 1/2 cup Corn
  • 1/2 cup edamame/ green peas
  • 1 link chorizo sausage
  • 3/4 cup rice ( 1 scoop of rice using the rice cooker container scoop)

Base:

  • 3/4 cup chicken stock
  • 1/2 tsp Paprika
  • 1/2 tsp pepper
  • 1 tbsp lemon juice

Steps:

  1. Mix soup base ingredients in a bowl
  2. Cut all the ingredients into small cubes, I did 1/3 inch for my toddlers, but you can cut it bigger if you desire
  3. Wash 3/4 cup of rice until it runs clear and add them to the pot
  4. Clean and Devein shrimp
  5. Dry and season shrimp and scallops with salt and pepper
  6. Add cubed vegetables and the marinated seafood on top of the rice
  7. Add sauce base
  8. Cover the lid and turn on the cooker to regular rice mode
  9. Once the machine beeps and everything is cooked, add lemon juice, mix them, and enjoy!

  • Choose the Right Rice: Short-grain rice like Arborio is best for paella as it absorbs flavors well and creates a slightly creamy texture.
  • Don’t Stir: Avoid stirring during cooking to let the rice cooker form a nice crust at the bottom, reminiscent of the traditional paella’s “socarrat.”
  • Use Seafood with Shells: Cooking with mussels or clams in their shells enhances the flavor, making the paella even more delicious.
