Rice Cooker Seafood Paella

Ingredients
  

Ingredients:

  • 10 shrimp
  • 4 scallop
  • 2 bell/ Serrano pepper chopped
  • ¼ onion chopped
  • ½ cup Corn
  • ½ cup edamame/ green peas
  • 1 chorizo sausage
  • ¾ cup rice 1 scoop of rice using the rice cooker container scoop

Base

  • ¾ cup chicken stock
  • ½ tsp Paprika
  • ½ tsp pepper
  • 1 tbsp lemon juice

Instructions
 

  • Mix soup base ingredients in a bowl
  • Cut all the ingredients into small cubes, I did 1/3 inch for my toddlers, but you can cut it bigger if you desire
  • Wash 3/4 cup of rice until it runs clear and add them to the pot
  • Clean and Devein shrimp
  • Dry and season shrimp and scallops with salt and pepper
  • Add cubed vegetables and the marinated seafood on top of the rice
  • Add sauce base
  • Cover the lid and turn on the cooker to regular rice mode
  • Once the machine beeps and everything is cooked, add lemon juice, mix them, and enjoy!
