Day 5 Hong Kong-style Pork Chop Rice

Ingredients:

  • 1/2 lb pork shoulder, cut into slices (can sub with pork chop) 
  • 1/2 bell pepper, chopped ( ~ 1 cup)
  • 1/2 onion, cubed (~1 cup)
  • 1/2 cup mushroom 
  • 3/4 cup of rice (1 scoop from the rice container scoop)
  • 1-2 egg
  • 2 slices of cheese, I used pepper Jack

Pork chop Marinate (I used 1/2lb pork shoulder, cut into big slice)

  • 1/2 tsp salt
  • 1/2 tsp cooking wine (I use Shaoxing wine)
  • 1/2 tsp sesame oil
  • 1 tsp light soy sauce 
  • 1/2 tsp sugar
  • 1/2 tsp white pepper
  • 1 tsp garlic
  • 1 tsp juice from grated ginger 

Soup base: 

  • 1/2 cup of chicken stock
  • 1 tbsp tomato paste 
  • 1 tsp sugar
  • 1/2 tsp black pepper (adjust to your liking) 
  • Few fresh parsley, chopped

Steps:

  1. Mix all soup base ingredients and set aside
  2. Cut all the ingredients into small cubes, I did 1/3 inches for my toddlers, but you can cut it bigger if you desire 
  3. Rinse 3/4 cup of rice and gently mix in whisked egg( 1 scoop of rice from the rice cooker scoop)
  4. Add cubed vegetables, the marinated pork and sliced cheese on top of the rice
  5. Add the soup mixture to the pot
  6. Cover the lid and turn on the cooker to regular rice mode
  7. Once the machine beeps and everything is cooked, mix them and enjoy!

  • Choose Jasmine Rice: Jasmine rice is fragrant and complements the dish perfectly. Rinse the rice thoroughly to avoid any stickiness.
  • Searing Adds Flavor: Searing the pork chops before cooking locks in flavor and gives the dish a nice texture.
  • Adjust the Sauce: Feel free to add a bit more ketchup or soy sauce if you like a stronger flavor, or a dash of chili sauce if you want a little kick.

  • 1 tsp sugar
  • ½ tsp black pepper adjust to your liking
  • Few fresh parsley chopped

Instructions
 

  • Mix all soup base ingredients and set aside
  • Cut all the ingredients into small cubes, I did 1/3 inches for my toddlers, but you can cut it bigger if you desire
  • Rinse 3/4 cup of rice
  • Add cubed vegetables and the marinated meat on top of the rice
  • Add the soup mixture to the pot
  • Cover the lid and turn on the cooker to regular rice mode
  • Once the machine beeps, squeeze in Lemon juice, mix them and enjoy!
  • Optional: heat up a flour tortilla in the Air fryer for 2 minutes
  • Add sour cream, guacamole and topping of your choice, wrap and ready to enjoy
