With minimal prep and cleanup, these one-pot rice cooker recipes are perfect for busy weeknights. Just toss in your ingredients, press a button, and let your rice cooker do the work.
Why Use a Rice Cooker?
Rice cookers are surprisingly versatile and perfect for creating easy, low-effort meals. Unlike the stovetop, a rice cooker offers an automated cooking process that’s perfect for cooking pasta evenly without needing constant stirring or adjusting heat levels.
Day 6: Mexico- one pot Burrito

Ingredients:
- 1/2 cup cilantro (chopped)
- 3/4 cup of rice (1 rice scoop that comes with the rice cooker)
- 1/2 cup corn
- 1/2 cup onion (chopped)
Base:
- 3/4 cup chicken stock ( or 3/4 hot water with 1 tsp chicken bouillon powder)
- 1/2 tsp paprika
- 1/2 tsp cumin
- 1/3 lemon juice (add when the rice cycle is over)
Meat and Marinate
- 1/2 lb Pork/ chicken/ beef
- 1/2 pack Taco Seasoning
Optional:
- Flour tortilla
- Shredded cheese/ sliced cheese
- Sour cream
- Guacamole
Steps:
- Mix all soup base ingredients and set aside
- Cut all the ingredients into small cubes, I did 1/3 inches for my toddlers, but you can cut it bigger if you desire
- Rinse 3/4 cup of rice
- Add cubed vegetables and the marinated meat on top of the rice
- Add the soup mixture to the pot
- Cover the lid and turn on the cooker to regular rice mode
- Once the machine beeps, squeeze in Lemon juice, mix them and enjoy!
- Optional: heat up a flour tortilla in the Air fryer for 2 minutes
- Add sour cream, guacamole, and topping of your choice, wrap and it’s ready to enjoy
Tips for Success
- Customize the protein: Add shredded cooked chicken, ground beef, or plant-based meat crumbles for extra protein.
- Spice level: If you prefer spicy flavors, add spicy green chile
- Make it a meal prep: Store individual servings in airtight containers in the fridge for up to 4 days. Reheat in the microwave before adding toppings.
