Use 2/3 cup of water/ chicken stock for every 3/4 cup of rice, keep seasoning the same, and cook on low-pressure rice mode with the vent open for 6 minutes. ❤

Day 14 Singaporean Laksa Rice with a soft steamed egg

Ingredients:

  • 1 cup of rice
  • 6 prawns
  • 3 fish balls
  • 1 cup bean sprouts
  • 4 tofu puffs, cut in half
  • (Optional) 1/2 cup white beech mushroom 

Prawns and marinate 

  • 1/2 tsp white pepper 
  • 1/2 tsp Shiao Xing Wine 
  • Salt and pepper to taste
  • 1/2 tsp sesame oil 
  • 1/2 tsp Garlic powder
  • 1/2 tsp ginger powder 

Soup Base:

  • 2/3 cup water
  • 1/3 cup coconut milk
  • 1/2 pack of Laksa paste

Steps:

  1. Mix soup base ingredients in a bowl 
  2. Wash 1 cup of rice and add them to the pot
  3. Clean, devein, dry, and marinate prawns
  4. Add all ingredients on top of the rice
  5. Add soup base and add 1-2 eggs to the steamer
  6. Cover the lid and turn on the cooker to regular rice mode
  7. Take out the eggs and put them in a cold water bath after 10 mins (soft runny egg) may cook to your desire. 
  8. Once the machine beeps and everything is cooked, mix them, and enjoy!

Tips for Success

  • Laksa Paste: If you can’t find store-bought laksa paste, you can make your own using ingredients like dried shrimp, garlic, lemongrass, turmeric, and chili.
  • Egg consistency: If you prefer a firmer egg, steam it a bit longer. For an ultra-soft, runny yolk, steam for less time.
  • Vegetarian Version: Skip the shrimp and add extra vegetables like bell peppers, carrots, or bok choy to make this a satisfying plant-based meal.
  • Broth variation: Adjust the thickness of the broth by adding more or less coconut milk or broth to your preference.
