Day 11: Mongolia: Mongolian BBQ- Style Spicy Cumin Rice

Ingredients:

  • 3/4 cup of rice 
  • 1/2 onion,  chopped
  • 1/2 cup Edamame/ green pea
  • 1/2 lb pork
  • 1 cup mushroom chopped

Base: 

  • 3/4 cup Chicken Stock
  • 1/2 tbsp Shiao Xiang wine
  • 1 tbsp soy sauce
  • 1/2 tsp 5 spice powder 
  • 1/2 tsp white pepper powder
  • 2 slices of ginger 
  • 1 tbsp chili powder 
  • 1 tsp ground cumin 
  • 1/2 tsp peppercorn powder
  • 3 cloves of Garlic, chopped 

Pork Marinate

  • 1/2 tsp salt
  • 1/2 tsp cooking wine (I use Shaoxing wine)
  • 1/2 tsp sesame oil
  • 1 tsp light soy sauce 
  • 1/2 tsp sugar
  • 1/2 tsp white pepper
  • 1 tsp garlic
  • 1 tsp juice from grated ginger

Steps:

  1. Mix soup base ingredients in a bowl 
  2. Cut all the vegetables into small cubes, I did 1/3 inch but you can cut it bigger if you desire 
  3. Wash 3/4 cup of rice and add them to the pot
  4. Add cubed vegetables and the marinated pork on top of the rice
  5. Add soup base
  6. Cover the lid and turn on the cooker to regular rice mode
  7. Once the machine beeps and everything is cooked, mix them, and enjoy!  

Tips for Success

  • Cumin and chili: These spices are essential for that authentic Mongolian flavor. Adjust the chili to your spice preference.
  • Protein choice: Lamb or beef are traditional, but chicken or even tofu can work well with the same spices.
  • For extra depth: Add a splash of dark soy sauce to the meat for a more complex flavor.
