Rice Cooker Spicy Coconut Shrimp

Ingredients
  

Ingredients

  • ¾ cup rice
  • 2 serrano pepper chopped
  • ¼ onion chopped
  • 2 slices ginger
  • 4 cloves garlic chopped

Shrimp and marinate

  • 10 shrimps
  • ½ tsp white pepper
  • ½ tsp Shaoxing Wine
  • Salt and pepper to taste
  • ½ tsp sesame oil
  • ½ tsp Garlic powder
  • ½ tsp ginger powder

Soup Base:

  • ½ cup Chicken Stock
  • ¼ cup coconut milk
  • 1 tsp lemon juice
  • 1 tsp soy sauce
  • 1 tsp fish sauce
  • 4 basil leaves chopped

Instructions
 

  • Mix soup base ingredients together in a bowl
  • Cut all the vegetables into small cubes, I did 1/3 inch for my toddlers, but you can cut it bigger if you desire
  • Wash 3/4 cup of rice and add them to the pot
  • Clean and Devein shrimp
  • Dry and  marinate shrimp
  • Add cubed vegetables and the marinated shrimp on top of the rice
  • Add soup base
  • Cover the lid and turn on the cooker to regular rice mode
  • Once the machine beeps and everything is cooked, mix them, and enjoy
